Sunday, November 3, 2019 – The Atlanta Chapter of Les Dames d’ Escoffier Green Tables Committee awarded Executive Chef/Culinary Director Nicholas Walker with the Sustainable Green Chef Award.

The accolade is given to the chef who demonstrates sustainable efforts during the 19th Annual Afternoon in the Country. It awards those who go above and beyond by exhibiting Farm-to-Table, Sustainable and Eco-friendly practices.

Afternoon in the Country featured Chefs from Atlanta’s top restaurants paired with the area’s best farms to create a tasting event. Proceeds from the event benefit scholarships for women in the culinary fields, Georgia’s farming community and organizations that feed the hungry.

Chef Walker, sourced by Comfort Farms (pictured above with Comfort Farms’ Founder Jon Jackson), created a 24-hour Sesame Cured Pork Shoulder with Caramelized North Georgia Candy Roaster Squash, Duck Fat and Miso Braised Collards, Japanese Sweet Potato Chip and Togarashi Spice.
