I hate waste, I really, really do. And repurposing items destined for the trash gives me a sense of accomplishment. So, when I was disappointed in a glass of wine from a bottle that I had just opened the other night, I thought about what I could do with it. If there was only a cup or so left, I would have put it in the bottom of the fridge and eventually used it in sauce or a beef stew. But it is summer, I can’t think of food that heavy right now AND it was the better part of a bottle. So I started researching homemade vinegars and I’m going to buy a mother! I’m going to try it at home and when it’s done, I’ll bring a bottle in for Chef Nick to try. Who knows where this may lead but it’s worth a try and I’ll keep you updated.
