Ginger Candied Bacon

Simply Syrup Infused with Ginger

1-cup sugar

1-cup water

¼ cup fresh ginger rough chopped

In a medium saucepan combine sugar water and ginger. Bring to a boil; stir until the sugar has dissolved. Allow to cool with ginger. Strain and set aside.

 Candied Bacon

12 slices bacon, about 1/4-inch thick

1/3 cup light brown sugar

 

Directions

Preheat the oven to 325 degrees F.

Cover a baking sheet with parchment or foil and arrange the bacon in a single layer on top. Brush bacon with simple syrup. Top with another layer of parchment or foil and top it, squarely, with another baking sheet. The baking sheet will flatten the bacon as it cooks.

Place the tray in the center of the oven and bake for 12- 15 minutes. Check the bacon by lifting the top tray and parchment. At this time sprinkle the brown sugar on top of the bacon and cook

5-6 more minutes. Next flip the bacon sprinkle a little more brown sugar another 5-6 minutes. Cook till the bacon is golden brown and crispy. Resist the temptation to turn up the oven temperature, and cook it for 3-5 minutes longer.

Allow to cool before serving
