No side dish says, “4th of July BBQ” more than corn on the cob. This year we’re trying out Chef Walker’s variation on the tradition with this yummy, Southern take on a corn side. Enjoy!

Sautéed White Corn with Bacon, Scallions, and Goat Cheese

Ingredients:
6 ears White Corn – cleaned from Cobb
1 Red Pepper – small, diced
1 Yellow Onion – small, diced
2 Garlic Cloves – minced
½ # Bacon – diced
1 bunch Scallions – chopped
2 oz. favorite Goat Cheese – crumbled
1 tsp. Black Pepper
1 tsp. Smoked Paprika
1 tsp. Celery seed

 

  1. Sautee diced bacon in cast iron skillet until crispy. Add corn, peppers, onion, garlic clove, and spices. Sautee until soft.
  2. Top with Scallions and Goat Cheese. Bake for 5 minutes at 350 degrees, until the goat cheese slightly melts.
  3. Serve in cast iron!
